TASTING NOTES
The harvest of Brunello di Montalcino San Filippo Dei Comunali 2017 began in the first ten days of October, with the first two days of cold maceration in the tank and subsequent to fermentation at a controlled temperature, followed by 12 days of maceration on the skins at a temperature of 26 ° / 28 °. The malolactic fermentation is carried out in concrete tanks, in steel tanks and in wooden vats, to make the product softer and more persuasive. 28 months of aging in barriques and 10 in bottle are enough to give us a spectacular Brunello. The color is ruby red with a slight tendency to garnet. The perfume is intense and complex, spicy, with dominant notes of Amarena cherry. The olfactory phase continues on the palate. The flavor is full, harmonious and persistent, with dense and silky tannins.
