TASTING NOTES
The Verdicchio grapes, which grow on the gently sloping hills facing east, are harvested by hand, in boxes and selected manually. The fermentation of the base wine is carried out at a controlled temperature in steel tanks. Subsequently the wine is aged, again in steel for 8 months. The tirage, that is the phase of refermentation of the wine in the bottle, lasts at least 4 months and, before disgorging, this sparkling wine ages on its lees for at least 36 months. What we find in the glass is a sparkling wine with a subtle and lively perlage, a bright straw yellow color. Very intense aroma, with notes of fennel seeds and hazelnuts. Dry and fine taste, in the mouth vegetal sensations alternate with more mineral and structured nuances. Suitable as an entrance, but can accompany the meal. DISGORGEMENT: July 2019
