"Today excellence is taken almost for granted, diversity is made on the service related to the product, on the particular attention that must be paid to the consumer, wherever it is." The path taken by Guido Folonari, heir to one of the historic Italian wine families, is the evolution of an oenological project that began several years ago in the most prestigious production areas located between Piemonte and Toscana, and to date realized. A philosophy based on excellence, the quality of the product, the constant search to improve, the typicality of a product linked to a well-identifiable territory. With the knowledge that the earth has its needs and its times. You have to know how to respect them. The companyDonna Olimpia 1898, or Olimpia Alliata, Lady of Biserno and bride of Gherardo della Gherardesca, which gave its name to the Estate in 1898 on the occasion of the 25th anniversary of their marriage, has an area of about 60 hectares all located in the Doc Bolgheri and covers a strip of territory that goes from km 167.8 of the Aurelia highway inland for about 1.2 km. The production area runs parallel to the beaches of the Northern Maremma located in the province of Livorno, in the municipality of Castagneto Carducci. To the east a chain of hills runs parallel to the beach, between Bibbona and Castagneto and protects vineyards and olive groves from the icy northerly winds that, during the winter, often cause frosts. In summer, however, this corridor is traveled in the opposite direction by refreshing winds that come from the sea and that, together with the discreet temperature excursions of August and September, cause slow and regular maturation of the grapes, and contribute to maintaining high acidity, necessary to give balance and longevity to the wines. The morphology of the land is flat and is cultivated for 45 hectares of vineyards and partly arable land. The vineyards are located on a limous sandy soil formed in a continental, wind, flood-filled environment. A unique terroir in the world that gives great strength and potential to the historical vines of Bolgherese: Cabernet Sauvignon, Cabernet Franc, Merlot, Syrah, Petit Verdot and Vermentino. The composition of the wine helps to characterize the wines with pleasant and savory minerality, harmonious structure and intrinsic elegance. The estate boasts a modern cellar of 5000 square meters, designed with a view to high energy saving and minimal environmental impact, to limit waste. The aging in wood takes place in oak barriques French. The Barricaia is certainly the most evocative environment of the entire wine estate. To enhance the expansion and completion of the cellar, a project has been carried out that uses almost entirely LED sources, with different illuminations depending on the needs and hours of the day, combining atmosphere, functionality and attention to the environment. The attention to detail, from the earth to the bottle, is rewarded every year by major international guides such as James Suckling and Robert Parker, confirming that in wine there are no shortcuts, and to get the results you need a lot of commitment and hard work.
