Ziru,is an archaic Sardinian word for the ceramic jars that farmers needed to store wine and oil. In this case it identifies a Vermentino (Igt, Isola dei Nuraghi) harvested manually, aged in terracotta amphorae and produced in limited quantities. What will be tasted is an intense, timeless golden wine shaped by amphorae and maceration patients. The vermentino grapes, born from vineyards cultivated on marl and calcareous soils deeply influenced by the sea, were harvested manually at the end of August and macerated on the skins for about twenty days. Subsequently, the must was poured into the terracotta amphorae to conclude fermentation and, during the following 24 months, complete the aging process. This wine is not filtered by choice, for consistency with fermentation and aging in amphora. Tasting it, rich floral notes emerge, accompanied by a marked minerality and a tannin smoothed by terracotta. Making wine in amphora requires more manual work and less mechanization, for this reason this technique is perfect for processing biodynamic grapes. Terracotta amphora is in fact a natural material, simple and with an added value compared to wood: terracotta does not give up aromas, does not change the organoleptic aspect of wine and for this reason it is preferred if you want to maintain the identity profile of the wine to its maximum potential; moreover, this material is breathable, therefore during aging the wines are microsegened naturally, without human intervention. The production of amphora wine is an ancient technique. Today the recovery of these techniques in biodynamic and natural productions is allowing us to rediscover the ancient flavors and scents of wines and the skills of producers and the very high quality of the products makes us think that this production technique is far from a fashion, but a return to the origins with a look at an eco-sustainable future. Ziru 2017 has been included in the classic OF THE TOP 100 ITALIAN WHITE WINES FOR THE SUMMER curated by James Suckling. The wine obtained the 21st position out of 100 obtaining the score of 95 points confirming the splendid work in the countryside and in the cellar of this dynamic Sardinian company.
