Bolgheri Bianco di Donna Olimpia 1898 is a Tuscan wine based on Vermentino, Viognier and Petit Manseng that has a bright and live straw yellow, and gives the nose aromas of citrus fruits, zagara flowers and caramel, with mineral and honeyed details. The taste is savory, full and warm with a persistent, but balanced aromatic finish. Tenuta Donna Olimpia 1898 is a property of 60 hectares, in the territory of Bolgheri, in which 45 hectares of new vineyards have been planted, following a study on clones and reindeer in collaboration with Prof. Attilio Scienza of the University of Milan. The established vines are obviously those whose vocation has been widely demonstrated and as far as white wines are concerned, vermentino, viognier and petit manseng. The clones have been carefully chosen on the basis of the characteristics of the soil that is sandy limous formed in continental, wind, flooding environment. Each variety is cultivated with great attention by the winery team, thus arriving at the harvest stage with healthy, ripe and rich in aromas. The must is processed in steel, where fermentation takes place at a temperature always controlled. Once this is completed, a first sieving is carried out, after which the wine stops on the fine lees (yeasts) for 14 months undergoing repeated reshuffles (battonages) in order to suspend the yeasts deposited on the bottom and to give the wine creaminess and body. After this long period of aging, the wine is cold stabilized and bottled. This technique makes the product more pleasant to taste and very long-lived. A little curiosity: the name ofDonna Olimpia 1898is in honor of Olimpia Alliata Lady of Biserno and bride of Gherardo della Gherardesca, who baptized the Estate in 1898 on the occasion of the 25th anniversary of their marriage.
