The Chablis region is the French northernmost wine-growing region in Borgogna. The vineyards around the city of Chablis, composed almost exclusively of Chardonnay, are among the oldest vineyards in France. Cultivated on both sides of the River Serein, the vines of the denomination include seventeen villages. In chablis, the Appellation d'Origine Contrôlée, equivalent to our DOCG, was established in 1938, but the Petit Chablis classification was not defined until 1944. All chablis vineyards are covered by four designations of origin, with different levels of classification, reflecting the different composition of the soil and the slope. The wine that is produced in this region is absolutely unique: the fresh climate gives a good acidity and less fruity aromas than the chardonnays of warmer areas, while the soil gives minerality and finesse. These wines often have a note of flint and sometimes a note defined as steel. This unique character of the wines originates in the mainly Kimmeridigian, the Jurassic marne dating back 150 million years, rich in marine fossils, where we find sediments composed of large quantities of fossilised oysters called exogyra virgula. Compared to the white wines of Borgogna, Chablis is rarely aged in wood, precisely to preserve its characteristics; the possible maturation in barrels is a stylistic choice followed only by some producers, to enhance its peculiarities. Many Premier Cru and Grand Cru wines are refined for a short period of time in oak barrels, but typically both the time spent in the barrels and the percentage of new barrique usage are quite limited. The Estate of Lavantureux is located in Lignorelles and has been handed down from father to son for several generations. Today it is David and Arnaud who perpetuate the history of the family Lavantureux Frères. Thanks to the use of the Viticulture Intégrée, no pesticides or chemicals are used in the 20 hectares of vineyard of the winery. Also in the cellar each step is followed with meticulousness and respect of the winemaking steps.
