We remain in Borgogna,but in the northern part of the Côte d'Or,the limestone ridge that is located in the heart of the Borgogna wine region. It extends from Dijon south of Nuits-Saint-Georges, which gives its name to the district and is the regional center. The Côte de Nuits is indisputably the world home of the best pinot noir red wines. The red wines of the Côte de Nuits possess a greater structure and organoleptic complexity than those of the Côte de Beaune and are considered the best Pinot Noir of Borgogna and the world. As in most Borgogna, the soil of the Côte de Nuits vineyards is extremely varied. Even areas on the same hilly slope or separated by a single dirt path can have noticeably different soil compositions. This variability of the soil is reflected in the bottle, in fact a pinot noir produced near the village of Gevrey-Chambertin has very different characteristics from a pinot noir produced in the adjacent village of Morey-St-Denis. To this are added, in addition to the different philosophies of maturation of the grapes, also the different winemaking techniques adopted by the individual producers with the aim of increasing the structure and complexity of the other red wines, characterizing them more. An example would be the use of prefermentative cold macerations,where there are fierce supporters and fierce detractors, closer to tradition. Each bottle is a discovery, a world in its own right, and our selection wants to be a journey among the excellences of the area.
