The Clos Saint-Denis is a prestigious vineyard located in the Côte de Nuits region of Morey-Saint-Denis, famous for the production of high-quality Pinot Noir wines. Divided between 15 estates and part of the Grand Cru territory since 1936, this 6.6-hectare vineyard is managed by Domaine Georges Lignier et Fils on an area of 1.40 hectares. The vines are carefully cultivated using techniques that take into account the soil and the specific grape variety, located on limestone-clay soil with a thin surface layer of 30 centimetres. The grapes are harvested and selected by hand, with a percentage of whole bunches used ranging from 10 to 30 per cent. After a 3-5 day cold maceration, a 4-5 day fermentation with indigenous yeasts follows. After fermentation, the wine is racked directly into 228-litre oak barrels, 25% of which are new, for an 18-month maturation during which two racking operations are carried out to remove the lees. The Clos Saint-Denis has an intense red colour and a complex bouquet, with a pleasant opening in the mouth and a fine balance between sweetness and acidity. This Grand Cru, representative of the Morey style, is distinguished by its finesse and has excellent ageing potential, with the best vintages being able to rest in the bottle for up to 25 years without losing their freshness.
