The Piesporter Domherr Riesling Kabinett 2022 is a wine made from Riesling grapes grown on an imposing hillside of Celtic origin, which stretches like an amphitheatre from the south-west to the south-east. The grapes used come from vineyards with an inclination of up to 55°, exclusively exposed to the south, on soil rich in silver-grey slate and very exposed to the weather. The vines are 30 years old. The grapes are harvested by hand in the second half of September, after which they are gently destemmed and pressed. The must is cold clarified overnight and fermented spontaneously until the desired residual sugar is reached, at which point the fermentation is stopped. After 5 months of ageing, the wine is bottled. The Kabinett Riesling is characterised by an exceptional synergy between the sweetness of the stone fruits, the fresh minerality and the lightness typical of Mosel Riesling. On the palate it surprises with a perfect balance between the intensity of white peach and the amplitude of petricore.

In 1950, after the death of his father, Gunther decided to sell everything except the wine cellar. In 1978, Stefan Steinmetz was born. Brauneberg in the Mosel is considered the sanctuary of Riesling, and the history of the Steinmetz winery is inextricably linked to this renowned wine region. For decades, the family has dedicated itself to the production of classic Riesling wines, favouring ripe and dry or semi-dry grapes, in contrast to the region's tendency to promote sweet wines. The harvests in Mosel are late and the long and natural spontaneous fermentations give Stefan's wines great complexity and a unique character. Vinification is spontaneous and is completed with malolactic fermentation. Stefan reads the terroir with extreme precision, adapting the vinification in wooden or steel barrels according to the characteristics of the soil, giving his wines authenticity and personality.
