TASTING NOTES
It is produced in the best vintages only with carefully selected grapes from the oldest and best exposed vineyards of the company. To underline the pungent character that distinguishes it, it has been called Salvàdek: a Brescian dialect word that means wild. The 2016 season was the coolest and rainiest in recent years. The resulting cascola had a significant impact on the quantity of grapes. The month of August was also quite cold and the ripening of the grapes was considerably slowed down, luckily enjoying the strong temperature variations that occurred especially after August when the weather finally has turned to nice weather. Thanks to these favorable climatic conditions, the 2016 base wines proved to be of excellent quality and a surprising complexity and aromatic intensity. Important structures and sustained acidity, even in the malic component, give these wines a marked predisposition to medium-long or very long ageing on the yeasts. This cuvée Salvàdek 2016 is made up of 9 crus spread over 70 hectares of vineyards strategically distributed in the heart of Franciacorta. The harvest is done manually with the harvesting of the grapes in boxes. These, once brought to the cellar, are squeezed in a pneumatic press, which guarantees a soft pressing. Each cru is processed and vinified in purity. Part of the musts is vinified in steel vats at a controlled temperature while the rest is vinified in oak barrels. The base wine is now ready to be bottled with 5% o reserve wine, and from here the second fermentation starts. 40 months of bottle aging and low dosages are the keys to obtaining this bright and luminous golden yellow Franciacorta with a fine and persistent perlage. At the nose it opens immediately with sweet notes of white peach and lily of the valley, and then leaves room to the delicate notes of hawthorn. In the mouth it surprises you with its sapidity and elegant acidity with a closing of marine notes.
