Cabochon is the most prestigious Franciacorta of Monte Rossa. The Fuoriserie Rosé N°06 joins the brilliant Cabochon firmament, the culmination of an exciting and virtuous journey characterized by desire and determination. The Monte Rossa hill is part of that crown of hills that closes Lake Iseo to the south with the beginning of the subalpine area and separates it from the Po area. The vineyards are located in the passage area of ​​the air currents that develop due to the heat exchanges between the Po Valley and Lake Iseo. The Crus that make up this Franciacorta Rosè are: Pratone, Barek, Brolo, Palo, Nespoli. The grapes are harvested strictly by hand in boxes. After a careful selection, always manual, the grapes are transferred to the press. Soft pressing has a yield of no more than 48%. Each cru is vinified in purity, in 250-liter oak barrels between September and February. The refinement in the bottle lasts over 40 months. The Cuvèe is made up of 80% wines from historical crus and 20% of reserve wines. Franciacorta Cabochon Fuoriserie Rosé N ° 06 has an intense and brilliant pink color with copper inclusions. Inviting to the scent, it opens on freshly baked brioche and hazelnuts, as well as candied lemon peels and ripe wild strawberries, making it very complex. Full and soft on the palate, with a subtle, dense and persistent perlage, it is almost dense and creamy. It has many red fruits in the long finish with a light salty finish and a return of clementines.
