46 hectares of vineyard nestled between the Gulf of Saint-Tropez and the majestic Plaine des Maures nature reserve. The Cinsaults are cultivated on hillsides, thus providing exceptional exposure. Nearby and slightly lower down, there is a large plot of Rolle (Vermentino). Syrah grows on the plateau in the La Grande Pièce plot. Finally, in the Perrono plot, named after the family that planted the first vines in the mid-20th century, young white and black Grenaches have joined the magnificent Syrahs already established. All this contributes to Ultimate Provence's unique viticultural terroir. Winemaker Alexis Cornu defines Ultimate Provence as the epithet for a distinctly contemporary Provençal rosé. Grapes are harvested at night to preserve aromas. The grapes come together in a symphony of fruit with floral touches and spicier notes, mainly from Syrah and Rolle. Its clear color, which alternates between auburn and silver highlights, is the result of know-how combined with a hand selection of the best juices from the press, followed by lees stabilization to enrich the bouquet and flavor. The fermentation temperature is maintained at about 16-18°C. A short aging on the lees precedes final blending and bottling. In the glass it is a vibrant pale pink with auburn highlights. On the nose we find an intense palette of aromas, with notes of fresh lemon and exotic fruit combined with floral notes. The palate is an explosion of freshness underscored by white spices. Perfect as an aperitif, with spicy dishes and bold fusion cuisine. The beauty of this wine extends from the bottle to its contents and offers a palette of intense aromas that reveal bold fruity and floral notes, and a citrusy freshness that reflects the spirit of the estate.
