TASTING NOTES
The 2014 vintage proved to be particularly advantageous, characterised by ideal climatic conditions during the flowering period. The abundant harvest yielded healthy and well-ripened grapes, facilitating the production of exceptional wines. The grapes employed comprise both white and black varieties, with Chardonnay sourced from the Côte des Blancs and Pinot Noir from the Côte des Bar, meticulously selected from the finest parcels. The grapes undergo pressing, with the juices subsequently transferred to traditional belon vessels. The clarified musts are then fermented in temperature-controlled stainless steel tanks. Immediately following alcoholic fermentation, 48% of the wines undergo malolactic fermentation, which is partially integrated into the blend. Only after this stage does the process proceed to bottling and secondary fermentation. This vintage champagne matures for a minimum of ten years in the cellar, revealing its complexity on both the nose and palate. The Liqueur d'Expédition is crafted from Devaux reserve wines aged in large oak barrels. On the nose, it unfolds with a captivating floral bouquet, complemented by fresh notes of white fruit. The extended bottle aging imparts delicate nuances of hazelnut, further enriching its aromatic profile. On the palate, this champagne offers a delightful tension. The freshness is palpable, accompanied by a juicy sensation reminiscent of lemon zest. The finish is delicate, evoking the flavour of ripe yellow lemons, culminating in an overall very pleasant and satisfying tasting experience. The Devaux D Millésime 2014 lends itself to a variety of gastronomic pairings. It is particularly well-suited to accompany: Seafood, such as oysters, which enhance the wine's freshness. Cheese, notably Tomme de Savoie, which harmonises beautifully with its aromatic notes. Fish dishes, including sea bass or lobster, which complement the elegance of this champagne. Since its inception, DEVAUX has presented only nine vintages from the Collection D: 1996, 2000, 2002, 2005, 2006, 2008, 2009, 2012, and 2014.

Devaux Discover the Maison Devaux and its fine Champagne in our online store The Devaux's family story began in the mid-19th century with the brothers Jules and Auguste Devaux and continued with three women who share a similar destiny and strong entrepreneurial skills. Madame Claude-Joseph Devaux , after being widowed in 1843 at the age of 39, takes over the reins of "Maison Vve A. Devaux" and run it together with her son François-Auguste. The second symbolic woman, Augusta-Maria Herbin , wife of François-Auguste, after her husband's death in 1879, led the company until 1895. In 1907, Auguste's son died prematurely and that's how the last protagonist of this particular story enters the scene: Marguerite Marie-Louise , the third “widow Devaux”. For more than a century, the brand remains the property of the founding family. In 1987 the descendant, Jean-Paul Auguste Devaux, having no children, decided to hand over the future of the brand to Laurent Gillet , president of the "Union Auboise" , today  “Groupe Vinicole Champagne DEVAUX” . Currently the headquarters and the production site are located in Hameau de Villeneuve , in an 18th century mansion on the banks of the Seine that has been perfectly restored to its original splendor. Sustainable management of the vineyards, technical support and follow-up at every stage of the season and pressing as close as possible to the vineyard are the strengths of the Champagne Devaux. This approach to quality is also applied in the cellar, where the aging of reserve wines takes place in mainly oak vats. The pressing wines are chosen for the Classics and for the Collection D , the spearhead of the production. The annual production stands at 650,000 bottles in total .
