TASTING NOTES
Domaine George Lignier is a winery in Burgundy, on the Côte de Nuits in Morey-Saint-Denis. The estate covers16 hectares planted with vines that are divided into 17 appellations that are in turn distributed into 50 parcels. Benoît Stehly, in the fifth family generation, produces wines of incredible merit and quality. The vineyard from which this wine is produced falls on two parcels, "Les Crais" and "Clos Solon," both located on the lower slopes of the hill at an elevation of 240 meters above sea level. The soil is clay composition with rocky outcrops. The appellation covers 1.81 ha, producing 80 hectoliters (10,000 bottles). The vineyard is cared for by paying attention to the soil and variety. Pruning is by simple Guyot. Vinification takes place in three stages: an initial cold pre-fermentation maceration for 3 to 5 days; then classic fermentation for 4 to 5 days, followed by another 3 to 4 days to complete the extraction of tannins and anthocyanins in the right proportions. After pressing, the wine is racked directly into 228-liter barrels. During the 18 months of aging in wood, two racking is done to remove the lees. Bottling takes place directly on the estate under the watchful eye of Benoît. Wine with an intense red color , bouquet of enormous complexity, with more fruity aromas prevalent during the first years, which then give way to others with fuller tones.
