Domaine Gilles Morat is certified as an organic winegrower. The artisanal approach to winemaking allows the use of natural and ecological cultivation methods. The soil is worked in its entirety, manual labour is taken into account and the grapes are harvested by hand. Exposure on the south-east slope of the high hills of La Roche de Vergisson. Its surface area is one hectare, on cadastral land known as Sur La Roche. The shallow soil consists of Jurassic limestone. The vines, which are 40-50 years old, are located on a band of very mineral soil. The grapes are harvested by hand and taken immediately to pressing. After racking, the must is fermented directly in French oak barrels. The wine rests until the following August. Following regular battonages and topping up, once malolactic fermentation is complete, the wine goes through draught; it is then blended, lightly filtered and bottled. On the nose, fruit is predominant and a touch of vanilla due to the oak delicately harmonises the aromas. On the palate, roastiness can be perceived, but in a precise way, on a taut and concentrated palate overflowing with freshness. There is a slight hint of pine resin and a wonderful head sensation that finishes with an extraordinary freshness. The structure is round, but the freshness is dominant. Wonderful. To be drunk from 2024 to 2029.

Gilles and Joëlle Morat founded the Domaine Gilles Morat in Vergisson in 1997. In fact, Gilles' father and grandfather owned the vines but they always had sold their grapes to shopkeepers. After 15 years in the electronics industry, Gilles decided that it was time to return to his hometown and combined his father's vineyards with other plots to create the domaine. The decision to keep a small size estate lies in the desire to continue the craftsmanship of the product . The domaine is certified organic and, only when necessary, minimal quantities of organic fertilizer are applied. The vineyards extend for about 5 hectares and are covered by two denominations: Pouilly Fuissé and Saint-Véran . The painstaking work that begins from cultivation in the vineyards to aging in the cellar results in rich and elegant wines , which reflect the terroirs of Vergisson.
