TASTING NOTES
Chardonnay Saint-Véran Roche Mer is produced in two east-facing lieux-dits: Les Châtaigniers, on one side of the Roche de Vergisson, and La Rapie, on the opposite side. The soil is mainly clay and limestone. The grapes come from vineyards at the foot of the limestone ridges of the Vergisson. The grapes are harvested by hand and immediately pressed before cold decanting of the must. Alcoholic and malolactic fermentation take place in temperature-controlled tanks. The wine remains on the lees for 10 months, with regular batonnage until the following August. After malolactic fermentation, the wine is racked, blended, lightly filtered and bottled. Delicate aromas of lemon and sun-dried hay open up on the nose. The palate is a pleasant combination of freshness and liveliness, with subtle notes of stone fruit and a freshness that permeates the entire wine. The result is a very intense, full-bodied wine that is truly exceptional.

Gilles and Joëlle Morat founded the Domaine Gilles Morat in Vergisson in 1997. In fact, Gilles' father and grandfather owned the vines but they always had sold their grapes to shopkeepers. After 15 years in the electronics industry, Gilles decided that it was time to return to his hometown and combined his father's vineyards with other plots to create the domaine. The decision to keep a small size estate lies in the desire to continue the craftsmanship of the product . The domaine is certified organic and, only when necessary, minimal quantities of organic fertilizer are applied. The vineyards extend for about 5 hectares and are covered by two denominations: Pouilly Fuissé and Saint-Véran . The painstaking work that begins from cultivation in the vineyards to aging in the cellar results in rich and elegant wines , which reflect the terroirs of Vergisson.
