TASTING NOTES
The name Chambolle, which derives from the term champ bouillant, meaning boiling field, refers to the frequent flooding caused by heavy rainfall from the surrounding slopes, making the nearby Grone stream prone to overflowing. This picturesque rural settlement covers about 100 hectares dedicated to the production of fine red wine. The soils cultivated in this area are characterised by a rich presence of pebbles and gravel, which give the wine an extraordinary versatility, as well as containing a considerable amount of iron. The wine-growing estate covers an area of 0.8386 hectares and the vines are cultivated using techniques suited to the soil and the specific variety. Pruning follows the Guyot method with simple canes. The grapes are harvested and selected by hand on the estate, with the percentage of whole bunches used varying between 10 and 30 per cent depending on the vintage. After cold maceration lasting 3-5 days, fermentation takes place for 4-5 days, during which the must is transformed into wine thanks to the use of indigenous yeasts. It is possible to prolong the extraction of soluble substances such as tannins and anthocyanins for 3-4 days to ensure full integration into the wine. After pressing, the wine is transferred directly into 228-litre oak barrels, 25% of which are new. Malolactic fermentation takes place in the traditional way with native bacteria and the wine matures for 18 months in oak barrels, with two racking to remove the lees. At the end, the wine is bottled on the estate without filtering. This wine has an intense red colour. In the first years, one can appreciate dominant aromas of raspberry and other fruits, which gradually give way to more robust and woody notes with age. The Chambolle-Musigny offers a high versatility and superior quality that allows a pleasant tasting after only 2 years from the bottle, maintaining a strong charm even after a decade.
