TASTING NOTES
A solid 2019 Bolgheri Cabernet Sauvignon with medium body, super-integrated, firm tannins and a long, savoury finish. Beautifully crafted, refined and structured. Perfect to open in 2024, we expect it to have fantastic longevity due to its tannins. The winter of 2018 was very harsh, with several days when the temperature dropped below zero, which is absolutely rare in Bolgheri. A March characterised by frequent rains restored the soil's water reserves, which had been drastically reduced by the previous season's drought. Sprouting was slightly delayed, but the absolutely favourable climatic conditions from April onwards favoured growth, even leading to slightly earlier flowering. The summer heat that characterises the area lasted throughout July and the first half of August, when some rains finally lowered the temperatures. The good weather continued until the beginning of October. The grapes of this Campo alla Giostra 2019 were harvested at full ripeness at the end of September to maximize the fruity potential of the grapes. The grapes, selected in the vineyard, were then taken to the cellar to be vinified. Alcoholic fermentation takes place in stainless steel vats at a controlled temperature, with the cap emerging with daily pumping over, then continues with the cap submerged in order to favor the extraction of color and aromas, prolonging the maceration for about ten days. Malolactic fermentation occurs immediately after alcoholic fermentation. Aging is 18 months in French oak barrels (50% new, 50% one year) and 6 months in bottle.
ORIGIN OF THE NAME
The name Campo alla Giostra "dei cavalli" is in honor of the 20th general of Varenne, born in 1995, who was raised by Dubois in the stables of the Estate.
