TASTING NOTES
The picturesque village of Chambolle represents the essence of elegance, depth, complexity, refinement and delicacy typical of the Burgundy region. The grapes used for this wine come from four different plots: Les Chardannes, Les Herbues, Les Gamaires and Aux Echanges, all located in the north-eastern part of the appellation and situated between 250 and 300 metres above sea level. The calcareous clay soil, which is particularly deep in this area on the edge of Morey-Saint-Denis, gives the wine a structure that reflects its proximity to this location. The Pinot Noir grapes were harvested at the optimal time from these four plots and were processed with great care to maintain finesse and enhance the vineyard's unique terroir. After 18 months of ageing in wood, 40% of which is in new barrels made from oak from the forests of central France, the wine has an intense, almost black colour. The bouquet is complex and powerful, with notes of oak, black fruits, raspberries, burnt wood and spicy touches of turmeric, eucalyptus, peppermint, blackcurrant leaf and fresh tobacco. The palate is rich, with a delicious sweetness at the start, followed by aromas of wild fruits, ripe cherries, raspberries and blood orange, with nuances of ginger and cardamom. The finish is vigorous, with refined tannins that guarantee the ageing capacity of this extraordinary wine.
