TASTING NOTES
It is produced in the best vintages only with carefully selected grapes from the oldest and best exposed vineyards of the company. To underline the pungent character that distinguishes it, it has been called Salvàdek: a Brescian dialect word that means wild. The 2015 season was the driest in recent years. The meteorological trend and the persistence of rather high average temperatures led to a short and concentrated harvest. From a qualitative point of view, the 2015 harvest is to be considered a rather interesting vintage, probably with a profile of wines more oriented towards structure and complexity than other vintages. This Salvadék 2015 cuvée is made up of 9 crus spread over 70 hectares of vineyards strategically distributed in the heart of Franciacorta. The harvest is done manually with the harvesting of the grapes in boxes. These, once brought to the cellar, are placed in a pneumatic press, which guarantees a soft pressing. Each cru is processed and vinified in purity. Part of the musts is vinified in steel vats at a controlled temperature while the rest is vinified in oak barrels. The base wine is now ready to be bottled with 5% reserve wine, and from here begins the second fermentation. 40 months of aging in the bottle and low dosages are the key to obtaining this Franciacorta with a straw yellow color, intense and complex with a range of pastry scents such as nougat, butter, candy and praline, complemented by the fresh and floral scent of bergamot. Followed by notes of honey, dried fruit and mocha. Closing with a long finish reminiscent of dry tobacco, tea and lime. In the mouth it has a beautiful structure with balanced sapidity and freshness, round savory and of great persistence. The 1.5l Magnum bottle is perfect to be enjoyed with at least a couple of friends.
