Raineri Franciacorta Dosaggio Zero DOCG is a dry, refined sparkling wine with great character, made exclusively from Chardonnay grapes grown in the estate’s vineyards in Erbusco, located on clay-leaning moraine soils. The grapes are hand-harvested at full phenolic ripeness to maximise their varietal qualities. The winemaking process involves gentle pressing at low pressure with must fractionation and controlled fermentation using selected yeasts. Secondary fermentation occurs in bottle at low temperatures following Raineri’s exclusive SoloUva method, which excludes the addition of external sugars (zero dosage), relying solely on the natural sugars present in the fruit. This technique ensures an extended lees ageing of 45 months, followed by an additional 6 months’ rest after disgorgement, imparting complexity and finesse. Visually, the wine shows a bright straw-yellow colour with golden reflections, accompanied by a fine, creamy, and persistent perlage. The nose reveals an elegant and refined bouquet, featuring aromas of white flowers, aromatic herbs, honey, and fresh bread crust. On the palate, it offers vibrant acidity balanced by pleasant minerality, with flavours of white-fleshed fruit such as nectarine and fresh orange zest. The mouthfeel is creamy, dynamic, and long-lasting, finishing with a savoury note that expresses the purity and elegance of its terroir. This Dosaggio Zero is an authentic, vertical expression of the Franciacorta terroir, ideal as an aperitif or paired with fish, shellfish, white meats, and fresh cheeses, while also surprising in more structured pairings. It is an elegant, lively, and highly enjoyable wine that embodies Raineri’s sustainable and innovative philosophy.
