Satèn is a registered designation by the Franciacorta Consortium that defines a specific production protocol based exclusively on white grapes—in this case, 100% Chardonnay. This regulation mandates a bottle pressure below 4.5 atmospheres, a maximum residual sugar of 15 g/L, and a minimum lees ageing of 24 months. These combined factors create a wine characterised by a soft, enveloping texture reminiscent of the smoothness of silk. Raineri Franciacorta Satèn DOCG Brut is produced in Erbusco on sandy moraine soils, using Chardonnay grapes hand-harvested at optimal phenolic ripeness. The winemaking process includes gentle pressing followed by controlled fermentation with selected yeasts. The secondary fermentation takes place in bottle at low temperatures, following Raineri’s exclusive SoloUva method, which relies solely on the grape’s natural sugars without added sucrose. The wine ages on the lees for at least 36 months, plus a further 6 months after disgorgement, developing its characteristic complexity and creaminess. In the glass, Satèn displays an intense, bright straw-yellow colour with a fine and persistent perlage, reflecting the reduced pressure in the bottle. The nose reveals an elegant and complex bouquet with fruity and floral notes enriched by hints of dried fruit. On the palate, it is silky and harmonious, with enveloping creaminess balanced by lively acidity, finishing with a savoury and persistent close that imparts balance and personality to every sip. This Satèn DOCG is ideal as an aperitif and pairs perfectly with delicate fish dishes, shellfish, light white meats, and young cheeses.
