TASTING NOTES
The vineyard is situated in a remote mountain basin at an altitude of between 300 and 420 metres above sea level and with a south-southeast orientation. It is renowned for its sandy-loamy coral limestone soil, a legacy of the Paratethys ocean. The vineyard's unique position, which leads to particularly cold nights, plays a key role in the creation of elegant wines with a distinctive note of herbs and minerals and a spicy salinity. The Premier Cru vines have an average age of 35 years. The grapes are harvested by hand with great care and fermented in stainless steel tanks using a natural and spontaneous process. The wine is then matured on its fine lees for 24 months in oak barrels and bottled without filtering. Sauvignon is characterised by its deep mineral and citrus aromas, accompanied by a saline note of caper and blackcurrant. The wine is rich in mineral aromas derived from the limestone soil, offering a long and pleasant persistence. It can be enjoyed young, but further ageing of 3-5 years is recommended to bring out its full potential. The wine can also age beautifully for up to 20 years in the bottle. It is produced from certified organic grapes.
