TASTING NOTES
The vineyards cover an area of 46 hectares and are located between the Gulf of Saint-Tropez and the Plaine des Maures nature reserve. The Cinsault grapes are grown on hillsides, ensuring excellent exposure. Nearby, there is a large plot of Rolle (Vermentino) situated slightly lower down. Syrah is grown on the plateau in the La Grande Pièce plot. The Perrono plot, named after the family that planted the first vines in the mid-20th century, now includes young white and black Grenaches alongside the established Syrahs. This contributes to the unique viticultural terroir of Ultimate Provence. Winemaker Alexis Cornu describes Ultimate Provence as a contemporary Provençal rosé. The grapes are harvested at night to preserve their aromas. For the 2023 vintage, which experienced high temperatures, it was crucial to carefully select the grapes. The combination of Syrah and Rolle grapes creates a harmonious blend of fruity, floral, and spicy notes. The clear colour, with alternating auburn and silver reflections, is the result of expert techniques, including hand selection of the best juices from the press and stabilization of the lees to enhance the aroma and flavour. The fermentation temperature is maintained at around 16-18°C. After a brief refinement on the yeasts, the final blending and bottling take place. It appears in the glass as a vibrant pale pink with coppery reflections. On the nose, there is an intense palette of aromas, with notes of fresh lemon and exotic fruit combined with floral notes. On the palate, it is an explosion of freshness underlined by white spices. Perfect as an aperitif, with spicy dishes and bold fusion cuisine. The beauty of this wine extends from the bottle to its contents, offering a palette of intense aromas that reveal bold fruity and floral notes, as well as a citrusy freshness that reflects the spirit of the estate. The winery Ultimate Provence is a certified organic producer.

Ultimate Provence

Ultimate Provence Discover Ultimate Provence in Provence and its fine wines in our online store Just 30 minutes from Saint-Tropez, the estate is located in a wild, natural setting on the edge of the Maures Nature Reserve and Natura 2000 area. Ultimate Provence covers 115 acres (46 ha) of vineyards, entirely under the AOP Côtes-de-Provence appellation. At the edge of a large oak forest in the heart of the nature reserve, we find the vineyard, which is characterized by shallow soil layered on an impermeable shale slab. This terroir is nourished by a rich humus of oak leaves and vine shoots. The finest Cinsaults are grown on hillsides, thus providing exceptional exposure. Nearby and slightly lower down is a large plot of Rolle (Vermentino), a grape known for its fruity notes of citrus and pears. La Grande Pièce is a magnificent parcel on a plateau devoted entirely to Syrah, which give the wines definite aromas of violets, red and black fruits. Finally, in the Perrono plot, named after the family that planted the first vines in the mid-20th century, young white and black Grenaches have joined the magnificent Syrahs already established. All this contributes to Ultimate Provence's unique viticultural terroir. Certified organic since 2021, these vineyards have also been rated at the highest level of High Environmental Value (HVE), which is an official recognition of winemakers' environmental performance. HVE certification is based on indicators found throughout a farm, and ensures that elements of biodiversity are widely present and that the impact of farming practices on the environment is minimized. Ultimate Provence offers a unique experience: the winery's state-of-the-art structure is combined with the charm of a traditional vineyard and the chic contemporary urban design of Monegasque designers Humbert & Poyet, who have curated the entire receptive area. Deeply immersed in the wine tourism of which the MDCV Group is proud, the UP / Ultimate Provence estate produces vintages of Côtes-de-Provence AOP, which are served alongside the gastronomic creations of chef Romain Franceschi, in harmony with the vision of winemaker Alexis Cornu. A truly exceptional place for a chic and relaxed lifestyle.
