TASTING NOTES
The vineyards cover an area of 46 hectares and are located between the Gulf of Saint-Tropez and the Plaine des Maures nature reserve. The Cinsault grapes are grown on hillsides, ensuring excellent exposure. Nearby, there is a large plot of Rolle (Vermentino) situated slightly lower down. Syrah is grown on the plateau in the La Grande Pièce plot. The Perrono plot, named after the family that planted the first vines in the mid-20th century, now includes young white and black Grenaches alongside the established Syrahs. This contributes to the unique viticultural terroir of Ultimate Provence. Winemaker Alexis Cornu describes Ultimate Provence as a contemporary Provençal rosé. The grapes are harvested at night to preserve their aromas. For the 2023 vintage, which experienced high temperatures, it was crucial to carefully select the grapes. The combination of Syrah and Rolle grapes creates a harmonious blend of fruity, floral, and spicy notes. The clear colour, with alternating auburn and silver reflections, is the result of expert techniques, including hand selection of the best juices from the press and stabilization of the lees to enhance the aroma and flavour. The fermentation temperature is maintained at around 16-18°C. After a brief refinement on the yeasts, the final blending and bottling take place. It appears in the glass as a vibrant pale pink with coppery reflections. On the nose, there is an intense palette of aromas, with notes of fresh lemon and exotic fruit combined with floral notes. On the palate, it is an explosion of freshness underlined by white spices. Perfect as an aperitif, with spicy dishes and bold fusion cuisine. The beauty of this wine extends from the bottle to its contents, offering a palette of intense aromas that reveal bold fruity and floral notes, as well as a citrusy freshness that reflects the spirit of the estate.
