TASTING NOTES
The 2021 grape harvest will certainly be one to remember, especially in Salento. The hailstorms that affected other neighbouring areas did not occur in this area. Instead, the drought was feared, but it did not particularly tire the vines and, on the contrary, caused the bunches to ripen slowly and evenly. The white grapes of 2021 are also very fragrant and slightly different in colour to other vintages. Malvasia Bianca is a typical grape variety of southern Italy, particularly Apulia. The wine, which is obtained by hand-sorting the grapes at harvest, fermentation at low temperature with selected yeasts and a short ageing in stainless steel tanks, is golden yellow in colour with fresh hints of broom and acacia flowers. In the mouth it is dry and fresh, with notes of almond that sweeten it. Perfect as an aperitif wine, it should be served chilled. When drunk young, it goes well with white meats, cured meats, fresh cheeses and rich salads.
