TASTING NOTES
To produce this wine, a first manual selection of the grapes in the vineyard is carried out at the beginning of August and a second selection, always manual, is made during the harvest. After fermentation at a controlled temperature, half of this wine is aged in large wooden barrels, while the other half is aged in steel tanks. The wine in the glass is intense ruby red and the nose is broad with plum and cherry aromas. In the mouth it is persistent, warm, soft and dry, with a hint of licorice. Perfect with roasted red meat or game meat and aged cheeses. The link with the territory is also underlined by the label, which represents the Porta Rudiae, the most interesting and ancient of the access gates of Lecce.
