In 1851, at just 29 years old,Charles Heidsieck founded in Reims the Maison de Champagne that still bears his name, with a visionary and forward-looking lighting that will make him an overseas legend, the famous Champagne Charlie. In fact, on the great social evenings of the palaces of Paris and London, it serves exclusively the Extra Dry of Charles Heidsieck and, in a short time, it is sold everywhere in the world. The style of Champagne Charles Heidsieck, strongly recognizable,is characterized by a high proportion of reservewines,which enriches the Maison's sans année cuvées, giving a rare and constant balance. The reserve wines represent the richness and uniqueness of Charles Heidsieckchampagnes, but they are also constantly evolving wines, which thanks to the savoir faire of chef de Cave are harmoniously assembled, enhancing the personality and peculiarities of each one. The vinification is carried out following a careful selection of the grapes, coming from excellent cru harvests and vinified individually in order to obtain different expressions of refinement, complexity and softness, then gathered in the final assembly. In addition, Charles chooses to refine his Champagne in the best conditions, inside the famous and ancient crayères,the ancient Gallo-Roman quarries dating back to the 2nd century and typical of the territory of Reims (the maison has owned more than eight kilometers of these majestic galleries, since 2015 unesco heritage). Located thirty meters deep at a constant temperature of 10°C,these gypsum caves-tunnels allow an exceptional natural aging. Inside the non-millesimate cuvées remain three years (the specification instead provides for only fifteen months), while the iconic cuvée Blanc de Millénaires reaches 10 years of aging sur lies.
