TASTING NOTES
The Cabochon Fuoriserie N°025 represents the most prestigious Franciacorta from Monte Rossa. Its creation is the result of a search that began in 1985, aimed at a more careful selection of the crus from the Monte Rossa hill and the introduction of an innovative winemaking system that utilizes barriques for the first fermentation of the must. The results have been so remarkable that this wine has established itself as one of the benchmarks of the winery. The Monte Rossa hill is part of the crown of hills that borders the southern shore of Lake Iseo, marking the beginning of the subalpine zone and separating it from the Po Valley. The vineyards are situated in a privileged area where air currents facilitate thermal exchanges between the plain and the lake. The crus that make up this Franciacorta include Pratone, Barek, Brolo, Palo, and Nespoli. The grapes are meticulously hand-harvested in crates, ensuring careful selection at the time of picking. After harvest, the grapes are transferred to the press, where a gentle pressing occurs with a yield not exceeding 48%. Each cru is vinified separately in 250-liter oak barrels between September and February. The aging in bottle extends for over 36 months, allowing the wine to develop complexity and depth. The cuvée consists of 80% wines from historic crus and 20% reserve wines. The Cabochon Fuoriserie N°025 showcases a bright straw yellow color and a very fine perlage that immediately captures attention. On the nose, it offers an enchanting bouquet featuring notes of dehydrated white flowers and ripe yellow fruit, enriched by fresh hints of lime. The palate is elegant and very pleasant, providing a sensory experience that can truly be described as a delightful indulgence. This sparkling wine is not just something to taste; it represents a genuine moment of pleasure.
