The Cabochon Vintage 2016 by Monte Rossa is a prestigious sparkling wine from Franciacorta, representing the vinicultural excellence of Lombardy. This vintage is produced with a blend composed of 70% Chardonnay and 30% Pinot Noir, coming from vineyards located on the moraine hills of Bornato, a renowned area for its favorable microclimate and soil quality. The harvest is carried out manually, ensuring a careful selection of the grapes at the peak of ripeness. The grapes are gently pressed and vinified separately in 250-liter oak barrels. After the first fermentation, the wine undergoes a second fermentation in the bottle, followed by a long aging on the lees that lasts over 54 months. This process gives the wine aromatic complexity and a refined structure. The Cabochon Vintage 2016 presents a golden-yellow color, with a fine and persistent perlage. On the nose, it reveals scents of hazelnut, pastry, sultana grapes, light coffee, and toasted notes. On the palate, it is broad and generous, with great complexity, balanced by an acidic and salty finish characterized by exotic fruit notes. The name Franciacorta identifies, since 1200, a small region near the Lake Iseo , in the province of Brescia.
