TASTING NOTES
4 Grand Cru: Cramant, Avize, Oger, Le Mesnil sur Oger and 1 Premier Cru: Vertus. Aged over 12 years on the lees. The 2007 vintage is anachronistic and in fact refers us to the great Blanc de Blancs of the 80s and 90s, with a contained maturity and a marked acidity. The vintage immediately aroused concern because it was very accelerated. There was a real anticipation of spring with the consequent appearance of the buds. Flowering began on May 25th. The bad weather then made the management of the vineyards very complicated, but at the same time it made it possible to preserve a good acidity of the grapes. A rather cool summer, combined with the arrival of heavy rains just before the harvest, effectively erased the memory of the hot summers of previous years. The pale gold color with greenish reflections is typical of Chardonnay and is in stark contrast to the previous vintage, 2006. On the nose, the chalky minerality of the Côte des Blancs is omnipresent. At first you will notice toasted and smoky notes and then, by swirling the glass, notes of fresh citrus fruits, grapefruit, yuzu and quince that give a carefree youth to the aromatic profile which is in itself fine and delicate. In the mouth the identity of the vintage is intertwined with a strong and classy acidity, reminiscent of the 2004 vintage in its first explosion of youth. An enveloping texture is then revealed with accents of lemon meringue pie and subtle saline notes. Champagne of great generosity that can persist and evolve with aging. The finish is long and full-bodied. The very nature of this vintage makes it perfect, first of all, to drink as an aperitif or at the beginning of a meal. For the more daring we recommend pairing with traditional Italian cheeses such as mozzarella, scamorza and pecorino di Pienza. The sea is the favorite place for food pairings: flying fish roe, sea urchin coral, smoked eel, large oysters and abalone. Vegetable notes delicately accompany these marine ingredients: seaweed, coriander, lemongrass, shiso, lemon balm and peppermint.
