TASTING NOTES
Meunier is cultivated on the right bank of the Marne Valley, between Epernay and Dormans. Racines is a tribute to the terroir of the Marne Valley and highlights the roots of the wonderful Meunier grape variety. The grapes are grown on the right bank of the Marne Valley and represent the essence of the Collard family heritage. The Collard Picard family has cultivated the Meunier grape variety for five generations, developing a unique expertise in its cultivation. The musts are decanted at a low temperature for 24 hours. Racines is vinified in large oak barrels with indigenous yeasts, without malolactic fermentation, and maturation on the lees in oak barrels for an average of 12-15 months. A blend of three different vintages is used, with a minimum of 65% reserve wines. The wine is matured at least four years in the cellar before release. The dosage of MCR (grape juice concentrate) is adapted to its development. The date of disgorgement is always printed on the back label. The wine is a beautiful golden colour in the glass. The nose presents intensely ripe fruit with an acidulous note reminiscent of apricots, figs and quinces. The sip combines opulence, expressiveness and freshness very effectively, framed by a refined salinity. This Champagne is truly unique.
