Domaine Georges Lignier is a historic family-owned estate located in the heart of Burgundy’s renowned Côte de Nuits, in Morey-Saint-Denis. Spanning 16 hectares across 50 parcels and 17 different appellations, this domaine is a respected reference for producing exceptional wines. Since 2008, it has been led by Benoît Stehly, the fifth generation of the family, who has passionately continued a winemaking tradition dating back to the early 20th century, focusing on a traditional style that respects the unique terroir. The 2021 Morey-Saint-Denis comes from two historic parcels, “Les Crais” and “Clos Solon,” situated on the lower slopes of the hill at around 240 metres above sea level. The clay soils with rocky outcrops give the wine a solid structure and a distinctive character linked to the site’s mineral composition. Covering 1.81 hectares, these vineyards produce approximately 80 hectolitres annually, roughly 10,000 bottles. In the vineyard, meticulous care is taken: vines are pruned using the single Guyot method, and the soil management prioritises plant quality and biodiversity. Winemaking involves three key stages: a cold pre-fermentation maceration lasting 3-5 days to extract delicacy; a classic fermentation lasting 4-5 days; followed by 3-4 days of extraction to develop tannins and anthocyanins, ensuring a balance between structure and softness. After pressing, the wine matures for 18 months in 228-litre barriques, with two rackings to remove lees, preserving aromatic purity and freshness. Bottling, personally overseen by Benoît Stehly, completes a process that marries technical skill with passion. This Morey-Saint-Denis shows an intense, vivid red colour that foreshadows its complex bouquet. In its early years, it reveals fruity aromas of cherry and red berries, accompanied by delicate floral notes of rose and violet, which gradually evolve into deeper, more robust tones with bottle ageing. On the palate, the wine is direct, linear, and intense, with elegant tannins and a balanced structure that supports vibrant freshness and a harmonious, persistent finish. Ideal paired with refined dishes such as red meats, game, mushroom risottos, and aged cheeses, this wine enhances flavours without overpowering them. Thanks to its balance of finesse and structure, Domaine Georges Lignier’s 2021 Morey-Saint-Denis is also perfect for those seeking a Pinot Noir with ageing potential up to 2033, promising a captivating and refined sensory experience.
