TASTING NOTES
The Premier Cru Vau-Ligneau is located in the commune of Beine, near Chablis, within the Burgundy region of France. This area is renowned for producing high-quality wines, particularly those made from Chardonnay grapes, thanks to the Kimmeridgian soils that impart a distinctive minerality to the wines. The Vau-Ligneau vineyard is part of the Chablis Premier Cru appellation, which spans approximately 115 hectares, contributing to Chablis's reputation as one of the most prestigious wine regions in the world. The Chablis 1er Cru Vau-Ligneau 2023 from Domaine Michaut Frères hails from this historic wine region in northern Burgundy. The 2023 vintage has benefited from favourable climatic conditions, promoting optimal ripening of the Chardonnay grapes. The vineyards are situated on Kimmeridgian soils, known for their limestone composition, which imparts high acidity and minerality to the wines. The predominant grape variety in this wine is Chardonnay, which expresses its full potential in this region due to its unique terroir. The vines are positioned on south-west facing slopes, ensuring perfect sun exposure and good ventilation—crucial elements for the health of the grapes and the quality of the final wine. Visually, the wine presents a vibrant yellow colour with greenish reflections that highlight its freshness. On the nose, mineral notes emerge alongside floral and fruity aromas typical of Chardonnay from this area. Citrus and green apple scents intertwine with hints of flint, creating a complex and inviting bouquet. On the palate, the wine is characterised by crisp acidity and an elegant structure; the mineral quality is pronounced with great persistence, making each sip fresh and vibrant. It pairs ideally with fish or seafood dishes. This Chablis 1er Cru Vau-Ligneau complements dishes such as oysters, raw seafood, and smoked salmon perfectly. Its freshness and minerality also make it suitable for hard cheeses like Comté. Domaine Michaut Frères is managed by the third generation of the Michaut family, active since 1960. Today, Adrien Michaut continues to innovate in winemaking while maintaining a strong connection to local traditions.
