This vintage stands out for its uniqueness: the Chardonnays were harvested after the Pinots, a rare occurrence that highlights the distinctiveness of this year. The year 2016 was atypical, characterised by a very rainy winter and spring, with an unusually cool start to the season that slowed down vine growth. However, the high summer temperatures from mid-August to mid-September led to optimal ripening of the grapes. The saying "Août fait le moût" perfectly applies to this harvest, emphasising how the summer heat contributed to bringing the vintage to ideal maturity. This Champagne is made from 100% Chardonnay sourced from the terroirs of Avize. With a dosage of only 2.5 g/L, the wine expresses the freshness and minerality typical of the region without any masking. On the nose, this Extra Brut Grand Cru Millésimé 2016 develops fresh aromas of white-fleshed fruit, accompanied by buttery notes that evolve quickly, adding further richness to the bouquet. On the palate, the wine presents a tender mouthfeel; its creamy and velvety texture enhances the buttery sensations, while notes of white peach and apricot blend with more brioche-like nuances. The finish is fresh, slightly mentholated, and saline, a clear reflection of the elegance of the Côte des Blancs. It is an ideal companion for a variety of refined dishes. It pairs beautifully with seafood, shellfish, and fish-based dishes, as well as more complex preparations such as risottos or white meat dishes.
