The search for complexity and balance guides Franck Bonville in the creation of the Extra Brut cuvée. The unique personality of the wines from the 2015 vintage makes it possible to reduce the dosage of the wine. This cuvée ages for over six years in the cellars and requires no dosage. The chardonnay is full and reflects the freshness, minerality and all the characteristics of the limestone soil. With a fine and persistent perlage, the nose reveals notes of maturity that only champagnes of this fullness can achieve. The minerality of this cuvée is evident and reveals the saline and iodine side of the refined chardonnay. The finish offers a saline sensation, characteristic of the chalky terroir. Round, powerful and generous, this Extra Brut cuvée is particularly appreciated as an aperitif. Fresh, delicate, creamy and complex, it is also recommended for pairing with oysters and lobster thanks to its minerality and its characteristic of being a Brut Nature. The 2015 vintage was surprisingly cool compared to the climatic conditions of the year, characterised by abundant sunshine and little rainfall during the spring and summer. At the end of August, a welcome and refreshing rain fell in Avize, revealing the wines' potential.
