The Sekt Brut Riesling Alte Reben Trocken 2020 is a sparkling wine produced from old Riesling vines, which are about 70 years old and cultivated without rootstock. The vineyard slopes are very steep, varying from 45° to 65°, which makes mechanisation impossible. The soils are east-southeast, south, south-southwest and the soil is mainly composed of deep blue slate with a large presence of quartz. The Riesling grapes are harvested by hand at the beginning of September and gently pressed to avoid excessive extraction of tannins from the skin and stalks. The must ferments spontaneously in stainless steel tanks and then matures in 1,000-litre oak barrels before being bottled. The second fermentation takes place according to the Champenoise Method, and after 10 months of maturation on the yeast, the bottles are ready for dosage and disgorgement. The wine displays a persistent and delicate perlage, with aromatic notes of fruit such as apple, pineapple and ripe citrus fruits, accompanied by hints of smoke and brioche. In the mouth, it is juicy and consistent with the olfactory notes, with a long finish characterised by marble-like acidity and a salty, slate-influenced minerality.
