TASTING NOTES
It is Franciacorta, born to celebrate Monte Rossa's 35 years of activity. Her name is a tribute to the founders of the company with the same initials: Paola Rovetta, a pioneer in Franciacorta since the 1970s and her husband Paolo Rabotti, promoter and founder of the Franciacorta Consortium as well as the first president. It is a Blanc de Blancs fruit of the passionate search for harmony between the breadth, structure, complexity of the reserve wine (35%) and the elegance, persuasiveness, finesse typical of Chardonnay (65%) of the best crus that confirms the production philosophy of the company aimed to find excellence not only in the vintage but in all its production. This cuvée is made up of 22 crus spread over 78 hectares of vineyards strategically distributed in the heart of Franciacorta. The harvest is done manually with the harvesting of the grapes in boxes. These, once brought to the cellar, are placed in a pneumatic press, which guarantees a soft pressing. Each cru is processed and vinified in purity. Part of the musts is vinified in steel vats at a controlled temperature while the rest is vinified in oak barrels. The base wine is now ready to be bottled with 35% reserve wine, and from here begins the second fermentation. 24 months of refinement in the bottle and a low dosage are the key to obtaining this splendid Franciacorta Blanc de Blancs with an intense straw yellow color, rich and with golden reflections. The nose has nuances of hazelnut and nougat, blood orange, quince, Williams pear, soft butter. On the palate it is very balanced even if very dry. It is an exciting glass. The Magnum bottle, 1.5l, with its original case, is a perfect gift.
