TASTING NOTES
This sparkling wine classic method Blanc de Noir vintage 2019 is produced entirely from a selection of Pinot Noir grapes growing at an altitude of 480 m above sea level on a marly limestone soil with a percentage of sand. The manually harvested and selected bunches are gently pressed so as not to transfer the colour into the must from the Pinot Noir skins. The base wine is fermented in steel tanks at 14°C and then bottled and stacked for the second fermentation. A month of re-fermentation at a very low controlled temperature, 30 to 40 months of ageing on the lees and about 1 year of remuage give a pale yellow wine with a fine and persistent perlage. The great olfactory complexity, with hints of rennet apple and dog rose, honey and bread crust are well balanced by a fresh and savoury mouthfeel and an important structure with good persistence.
