TASTING NOTES
The Trento Doc Brut from San Michael winery is notable for its straw-yellow color with golden reflections and a fine, persistent mousse. On the nose, it exhibits a fresh and vibrant profile, enriched with notes of white fruit, citrus, and a delicate hint of bread crust, resulting from yeast aging. The palate is characterized by vibrant acidity and balanced salinity, culminating in a long and pleasant finish. The vineyards of San Michael are located at altitudes ranging from 300 to 600 meters above sea level, with a southern/southwestern exposure in the Cembra Valley, an area renowned for sparkling wine production. The Trento Doc production adheres to strict conditions with a continuous focus on quality. Grapes are hand-harvested and gently pressed, following the regulations of the Metodo Classico. After fermentation in temperature-controlled steel tanks, the wine matures on its own yeast without undergoing malolactic fermentation, thus preserving its freshness and terroir characteristics. The second fermentation, known as Presa di Spuma, begins in the spring following the harvest and lasts for at least 24 months before disgorgement, ensuring a high-quality product that fully expresses the characteristics of the Trentino territory.
