The Trento Doc Dosaggio Zero from the San Michael winery is notable for its origin from vineyards located at altitudes between 300 and 600 meters above sea level, with a South/South-West exposure in the renowned Cembra Valley, an area particularly suited for growing grapes intended for sparkling wine production. The creation of this sparkling wine demands strict conditions and meticulous attention to detail to ensure a high-quality product. The grapes are hand-harvested and gently pressed, adhering to the guidelines of the Metodo Classico. A brief contact with the skins of the Pinot Noir grapes imparts an elegant rosé color with pastel shades. Following fermentation in temperature-controlled steel tanks, the wine matures on its own lees without undergoing malolactic fermentation, thereby preserving its freshness and typicity. The second fermentation, known as Presa di Spuma, begins in the spring following the harvest and lasts for at least 24 months before disgorgement. Unlike many other sparkling wines, the bottles are topped up with the same wine, without adding liqueur d'expedition. In the glass, the Trento Doc Dosaggio Zero exhibits a bright straw-yellow color with fine and persistent bubbles. On the nose, it presents a fresh and complex bouquet characterized by notes of white fruit, citrus, and a subtle mineral nuance, enriched by hints of bread crust from aging on the lees. On the palate, it is distinguished by vibrant acidity and balanced salinity; the absence of added sugars allows for a full appreciation of its varietal and mineral notes, culminating in a long and clean finish.
