The Trento Doc Rosé Brut by San Michael is a high-quality sparkling wine made exclusively from 100% Pinot Noir grapes. The vineyards are located in one of the most suitable areas for sparkling wine production, northeast of Trento, with a southwest exposure and an altitude ranging from 350 to 600 meters above sea level. This microclimate, characterized by hilly terrain and significant temperature variations, promotes optimal grape ripening. The grapes are hand-harvested to ensure only the best bunches are selected. The winemaking follows the Metodo Classico, involving a brief skin contact to impart the wine's characteristic pale pink color. After gentle pressing, the must ferments in temperature-controlled stainless steel tanks. The aging on the lees lasts at least 24 months, without malolactic fermentation, to preserve freshness and the terroir's unique qualities. Visually, it presents a bright, pale pink hue with a fine and persistent mousse. On the nose, it offers a fresh and fruity bouquet with intense notes of strawberries and raspberries, complemented by delicate floral nuances and a hint of bread crust from the lees aging. On the palate, the structure of the Pinot Noir provides an enchanting balance between acidity and softness, featuring varietal notes of wild fruit that culminate in a clean and refreshing sip. This sparkling wine is ideal for pairing with light appetizers, fish dishes such as sushi or sashimi, and cured meats. It is recommended to serve it at a temperature between 6 and 8 degrees Celsius to enhance its organoleptic characteristics.
