The Trento Doc Riserva Dosaggio Zero 2016 from the San Michael winery is a high-quality sparkling wine, resulting from a meticulous production process that respects the traditions of the Classic Method. This sparkling wine is composed of a blend of Chardonnay (55%) and Pinot Noir (45%), grapes that thrive in vineyards located in the Valle di Cembra, at an altitude ranging from 300 to 600 metres above sea level, with a South/South-West exposure. This area is particularly suited for sparkling wine production due to its favourable microclimate and mineral-rich soil. The 2016 vintage benefited from favourable climatic conditions, with a good temperature range that allowed the grapes to develop complex aromas and enviable freshness. The grapes were hand-harvested and subjected to gentle pressing. Fermentation takes place in temperature-controlled stainless steel tanks, followed by a long maturation on the lees lasting at least 60 months, without malolactic fermentation, to preserve the freshness and typicity of the territory. In the glass, it presents a bright straw-yellow colour, accompanied by fine and persistent bubbles. On the nose, it offers a complex and refined bouquet, with notes of ripe fruit, citrus, and a slight mineral nuance. Hints of bread crust emerge thanks to the long maturation on the lees. On the palate, the structure is balanced, with lively acidity and salinity that confer a long and persistent finish to the wine. The freshness is accompanied by a complexity that makes each sip a unique experience.
