TASTING NOTES
The Monterossa Cabochon Fuoriserie N.025 Magnum is an exceptional Franciacorta sparkling wine crafted by the historic Monte Rossa winery, located in the heart of Franciacorta, a region renowned for its elegant Metodo Classico sparkling wines. This wine’s distinctive feature is its Magnum format (1.5 litres), which allows for a slower, more harmonious maturation, enhancing the complexity and finesse of its bubbles. This Franciacorta is a blend of 70% Chardonnay and 30% Pinot Nero, sourced from carefully selected vineyards and fermented in barriques to impart structure and depth. It undergoes an extended ageing period of at least 42 months on the lees, resulting in a fine, persistent perlage. The bouquet reveals intense aromas of blond tobacco, mint, almond, white flowers, citrus fruits, and balsamic notes. Visually, it presents a brilliant golden yellow hue, while the nose offers a complex and refined aromatic profile. On the palate, it is balanced, fresh, and enveloping, finishing long and savoury, making it an ideal accompaniment to fish dishes, shellfish, and fresh cheeses. The Magnum format not only adds elegance to the table but also promotes better preservation and a more harmonious evolution over time, perfect for those seeking a Franciacorta with great character to share on special occasions. The Monterossa Cabochon Fuoriserie N.025 Magnum is truly a jewel of Franciacorta, a sophisticated and complex Metodo Classico that best expresses the terroir and philosophy of Monte Rossa, offering a memorable tasting experience.

Cabochon

Cabochon Discover Cabochon in Franciacorta and its fine wines in our online store The name Franciacorta identifies, since 1200, a small region near the Lake Iseo , in the province of Brescia. The wine produced has always enjoyed a good reputation and the first written testimony dates back to 1570 describing wine with "bubbles" , a product defined by the ancients as lively and bubbly. Today, the word Franciacorta no longer identifies only the territory but also the wine ( the noble Italian DOCG «bollicine» ) and the Metodo Classico (refermentation in the bottle with minimum aging of 25 months after the harvest). Born in 1987 from an intuition of Emanuele Rabotti , Cabochon soon became one of the most important symbols of the company. Refinement, intensity, elegance and an endless perlage: this is Cabochon, the most prestigious Franciacorta of Monte Rossa. Cabochon, so structured, rich and intense, is one of the spearheads in the prized territory of Franciacorta.
