TASTING NOTES
The clay-limestone soil is well exposed to the south and the vineyard management is rigorous and careful, so much so that no herbicides or insecticides have been used for ten years. This helps to obtain healthy, well-ripened grapes that are harvested by hand, sorting directly in the vineyard. Fermentation at a very low temperature in thermoregulated steel tanks and a long ageing on the lees give us a champagne with a fine and persistent perlage that opens with a nose rich in fresh fruit and delicate lime blossom. In the mouth it is ample, fresh and well-structured with a finish of marzipan notes. Perfect with shellfish and crustaceans. CRUCIFIX PÈRE & FILS cultivates its vines with the utmost respect for its terroir. Durable Viticulture (V.D.C.) and High Environmental Value (H.E.V.) are the continuation of their commitment and family values handed down over five generations.
