The Côtes de Nuits-Villages is a Burgundy appellation specialising in the production of red wines based on Pinot Noir, with a touch of Chardonnay. It comprises five communes in the Côte de Nuits region: Brochon, Fixin, Premeaux, Comblanchien and Corgoloin. The appellation was established in 1937 and encompasses approximately 160 hectares of Pinot Noir vineyards and 9 hectares of Chardonnay. Its privileged geographic location enhances the quality of the vineyards, which are unique compared to other appellations in the vicinity. The limestone-loamy soil, enriched with pebbles, is home to young and 60-year-old vines cultivated on the Creux de Sobron slope. The grapes are harvested by hand and transported to the winery for vinification. A portion of the grapes is destemmed and fermented for 8-10 days in vats to obtain elegant wines. After fermentation, the wine matures between 12 and 18 months in the cellars before bottling, with two or three rackings to separate the sediment. Before bottling, the wine is clarified and filtered. The Côtes de Nuits-Villages is characterised by a seductive ruby red hue and releases aromas of wild berries on the palate, with notes of morello cherry, blackberry and wild berries typical of the Côte de Nuits. The complex structure is accompanied by a delicate and harmonious finish, with an ageing potential of 5-12 years.
