TASTING NOTES
This regional blend of Pinot Noir grapes is sourced from two distinct areas: the Côtes de Beaune and the Côtes de Nuits, which collectively contribute 80% of the mass. The remainder is sourced from the Couchois area, renowned for its freshness. A small quantity of Pinot Noir from Beaujolais is added to impart colour and fruitiness. The grapes are primarily hand-picked and selected upon arrival at the winery. Prior to fermentation, a brief cold maceration is conducted to accentuate the fresh fruit aromas and flavours. Half of the mass is matured in barriques to enhance structure and complexity, while the other half is aged in tanks to preserve freshness and fruit character. The wine is deep red in colour, with an expressive, fresh and crisp nose, displaying notes of cherries and redcurrant jelly, followed by blueberry tarts and marzipan. The wine is remarkably fresh, round and well balanced, with a solid structure and good persistence. The wood adds perfectly integrated oak and caraway nuances. This Pinot Noir is an excellent example of the variety, with great complexity and freshness.
