TASTING NOTES
The Nuits-Saint-Georges Premier Cru vineyard is located in the south of the village and the soil is composed of brown clay and pebbles, which gives the wines extraordinary depth and maturity while maintaining a constant minerality. The 'Les Saint-Georges' climat, considered one of the best terroirs in Nuits-Saint-Georges, is being evaluated to become a Grand Cru. The Pinot Noir grapes are harvested at the optimal degree of ripeness and transported to the cellar, where they are carefully selected before being destemmed. Fermentation occurs naturally over several days, thanks to indigenous yeasts. Maceration lasts approximately two weeks, with minimal pumping and punching down. After racking, the young wine is transferred to barrels from the finest forests in central France, where it matures for eight months. The wine is then racked and left in barriques for a further 12 months, half of which is new oak. It has a dark red colour with bluish hues and a complex nose of undergrowth, mushrooms, herbs, black fruit and notes of smoke, caramel and baked goods. In the mouth it is full-bodied, with attractive volume and great length. Its intensity and complexity make it an ideal candidate for long-term cellar storage.
