The Adelaide Hills wine region is unlike any other in South Australia in that it produces high quality cool climate wines due to its location in the Mount Lofty Ranges. The cool climate and high altitude of the Adelaide Hills give the wines unique characteristics compared to others produced in the state. Adelaide Hills is famous for producing mineral and perfumed Chardonnays that are fresh and straight but with the acid structure needed to evolve well over time. These bright, elegant white wines rival the best, thanks to their intensity and complexity of fruit. The hand-picked grapes at full ripeness are destemmed, pressed and transferred for 30 days of low-temperature fermentation in French oak barrels to develop their characteristic golden colour and sweet aromas from the wood, before maturing in barrel for 8 months. Pale golden straw colour to the eye. Fresh nose with aromas of lemon sorbet, white peach and melon with classic flint and a hint of reduction. In the mouth, finely structured, elegant and delicate with notes of brioche and cream, marked by a natural, clean acidity. Well balanced and complex.
