TASTING NOTES
Les Essentielles is a Burgundy red wine made exclusively from old vines on different parcels of land in the Côte Mâconnaise in Burgundy. The vineyards are meticulously tended and require precise harvesting to ensure the quality of the raw material. The grapes are destemmed and placed in stainless steel vats where they undergo a cold pre-fermentation for 4-5 days, depending on the vintage. Alcoholic fermentation then takes place at a controlled temperature, with daily tastings, punching down and pumping over to extract the richness of the grapes. After drawing off and pressing, the wine rests in vats before being racked into barrels where it matures for about a year with spontaneous malolactic fermentation. After several tastings, the best barrels are selected for the final blend. Deep and elegant, with an intense ruby red colour, it offers aromas of fruit, cherries, blackberries and spicy vanilla notes. It has a robust and structured character, with a fleshy palate and a refined finish, and can be cellared for 5-8 years depending on the vintage.
