TASTING NOTES
This bottle is produced from a selection of grapes from old vines planted in shallow clay-limestone soils on the slopes of Mancey, Tournus and Vers. The grapes used are clearly only Pinot Noir, called Pinot Noirien or Pinot Beaunois. Vinification is aimed at producing a wine suitable for ageing for at least 8 years. The 2021 vintage, in contrast to the previous vintage, was a vintage marked by the classic Burgundy rhythms. The first half of the year was characterised by cool temperatures and heavy rain, while August was hot and dry. The dry weather and wind allowed the grapes to ripen properly and kept moisture and thus the possible development of mould away, resulting in perfect grapes. Maceration lasts 10-12 days. Ageing takes place exclusively in oak barrels, 20% of which are new. It generally lasts one year, during which it undergoes two racking, including blending. The wine is then refined for at least 6 months in the bottle before being sold. This Pinot Noir is therefore well rested after what is commonly referred to as bottling shock. The Bourgogne Pinot Noir Cuvée Spéciale is a wine with a strong colour with ruby highlights. The bouquet is characterised by aromas of red berries, grilled cherries, liquorice and hints of vanilla. It is a full-bodied, well-built wine, long on the palate. It can be tannic when young. This wine goes well with beef Bourguignon, coq au vin, a leg of lamb or turkey with chestnuts. It is fabulous with cheese. Certified Vegan.
